Lotus Dream | Speculoos Ice Cream Shake

I love Speculoos biscuits (cookies) and speculoos spread (also known as Lotus spread after the best-known brand). In this delicious ice cream shake recipe from cookbook Wings and Things by Ben Ford and David Turofsky, speculoos biscuits and spread are combined with milk and vanilla ice cream to make a deliciously indulgent milkshake with some tasty sandwiched biscuits to enjoy alongside.

Speculoos, hailing from Flemish Belgium and The Netherlands, are spiced shortcrust biscuits associated with the feast of Sinterklaas (Saint Nicholas) in early December. Made from flour, brown sugar and butter with cinnamon, nutmeg, cloves, ginger, cardamom and white pepper, they are a key taste of the Christmas season, though these days, they’re available all year round.

These punchy flavours work really well with milk and vanilla ice cream for a dairy shake.

Lotus Dream (Speculoos Ice Cream Shake)

Ingredients

  • 12 speculoos biscuits cookies, such as Lotus
  • 5 Tbsp speculoos spread, such as Lotus
  • 200 ml scant 1 cup whole milk
  • 6 large scoops of vanilla ice cream

Instructions

  • Take 4 biscuits and sandwich them together in pairs with a generous amount of biscuit spread.

  • Add the remaining 8 biscuits and the rest of the biscuit spread to a blender along with the milk and ice cream and process until smooth.

  • Pour an unhealthy amount into a glass and devour with the biscuit sandwich.
