I’d like to get beyond the sushi, teppanyaki and miso soup which appears on every Japanese menu and in supermarkets in varying quality,

I’d like to know what else to use miso pastes for – and the differences between the pastes for example. Really, I’d like to know what a Japanese larder has in it and what to make with it – typical everyday meals.

I love Japanese food and I love cooking. However, I have thus far been too apprehensive of trying Japanese dishes at home, believing them to be too complicated and therefore sticking to my more usual Indian/Middle Eastern or European dishes as I am comfortable cooking with the ingredients and flavours. If I won this, which I would love, it would be a great incentive to bring my love of Japanese food into my home and start experimenting in my own kitchen!
