Isabella’s Ginger & Oat Cookies | In Memory of Coriander Queen

It’s been over eight years now that I’ve been publishing Kavey Eats. There are so many reasons I enjoy blogging, not least the creative outlet it gives me for my writing and photography and the record of food enjoyed in restaurants and at home, of amazing travel experiences, of cookery classes, books and more. I love being able to share all of that with readers.

But there’s another side too, and that’s the many, many friendships I’ve made through blogging. While the nature of blogging has changed hugely over that time, what hasn’t changed is the sense of community and being part of a keyboard army of fellow food and travel lovers. It’s not only about learning from each other, supporting each other, collaborating on projects together but also about sharing celebrations of our achievements, or commiserating about the lows, and often a great deal of giggling about life, the universe and everything.

Recently, that community has felt a collective kick to the gut, a blow that leaves us reeling with shock and sadness. A few weeks ago, a wonderful woman lost her battle with cancer and passed away far too young, leaving behind a grieving family and circle of friends. Isabella King was a fellow food blogger – young, talented, kind and funny – and I loved interacting with her in one of my main blogger community groups. I can’t believe she is gone, at just 29 years of age.

Today, many of us are commemorating our friendships with Isabella and celebrating her blogging achievements by recreating and sharing recipes from her blog, Coriander Queen. Please join us in raising a glass, a fork, or a biscuit to the memory of Isabella King.

After browsing all of Isabella’s wonderful recipes, I chose these gorgeous ginger and oat cookies – a simple, timeless and delicious classic that is sure to be a crowd pleaser, whoever you bake it for.

Isabella’s Ginger and Oat Cookies

Servings 8 cookies

Ingredients

  • 1 tsp Golden Syrup (heaped)
  • 71 g unsalted butter
  • 57 g caster sugar
  • 57 g plain flour
  • 76 g rolled oats
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp bicarbonate of soda

Instructions

  • Lightly grease a flat baking tray and preheat the oven to 160’C.

  • Place a medium saucepan on the hob over a medium heat. Add the golden syrup, caster sugar and butter. Mix together and then leave to melt.

  • Once they have all melted together remove the pan from the heat and turn off the hob.

  • Stir in the plain flour, ground ginger, ground cinnamon and oats until combined.

  • Put the bicarbonate of soda into a small dish and add a tablespoon of hot water, stir until dissolved then stir into the mixture.

  • Leave the mixture for a few minutes to cool a little, it will firm up as it cools.

  • Roll the mixture into ping pong sized balls of about 30g weight each and place them spaced well apart on the tray. These will feel a little greasy and be quite soft due to the melted butter.

  • Bake in the middle of the oven for about 15 minutes or until golden brown.

  • Leave on the tray until cool, they will firm up as they cool.

  • Transfer to an airtight box or bag to store.

  • Enjoy!

    It is so sad when people leave young, before their time. It must be so hard for her family, bless them. RIP
    I might make these biscuits, as they use ginger powder, rather than candied ginger, which has too much sugar for me.

    I have been blogging for over 11 years and like you love blogging even after all these years. Things have changed in all this time for sure but I guess we are the old dinosaurs of blogging 🙂 When one has been blogging as long as we have life progresses and effects us – there are happy moments and not so happy moments and coming back to the blog to write and share has been often an important way for me to deal with many issues. Sorry about your loss – a great way to honor her memory!

    I’ve not tried this recipe with wholemeal flour myself so I can’t give a definitive answer. Usually switching flours does have an impact on texture, but I’d say it’s worth a try!
